Uncover the Hidden Health and Environmental Costs of the USDA Eating Model

This course invites you to critically examine the USDA Eating Model and the industrial food system that has shaped it for decades. Although widely promoted as science-based, this national eating model has been strongly criticized by leading nutrition experts for being influenced by industry interests rather than ecological and human health.

In Part One, you’ll explore how eco-negligent farming and food production practices harm people, animals, ecosystems, and the planet’s life-support systems. Designed for parents, educators, teens, college students, and health advocates, this course builds food literacy by revealing the difference between whole and “un-whole” foods—based not just on nutrients, but on how foods are grown, processed, and delivered to your table.

Through engaging videos, illustrated chapters, and colorful infographics, you’ll gain clarity about why sustainability has been excluded from dietary guidelines and why production methods matter. By the end, you’ll be empowered to make informed food choices—and to use your voice as a conscious consumer and advocate for change.

What does it mean, to farm and eat in an eco-negligent way? To be negligent, is to be neglectful; careless. It is to omit what ought to be done, or to do it in a heedless manner. Add this definition to the terms "farming" and "eating", and what do you have?

Did you know the USDA Eating Model dates back to 1916? Even though the model has evolved over the years, it hasn't always aligned perfectly with optimal human health. (0r environmental health for that matter!)
