Self-Empowerment on the Path to Eco-Nutritional Living
Course Module Description: This course (featuring Side Dishes 4 & 4X ) invites you to explore the powerful connection between food, health, ethics, and planetary well-being. Through reflective, creative, and practical self-empowerment activities, you’ll examine how food choices affect your body, your emotions, and the living systems that bring nourishment from farm to table.
Designed for eco-learners and Eco-Mentors, the activities explore conscious eating, food quality, labels, plant-forward meals, nutrient density, food allergies, seasonal eating, and cultural food traditions. You’ll also reflect on the emotional, relational, and spiritual dimensions of eating and mealtimes.
By the end of this module, you’ll understand what plants, animals, and ecosystems require to produce health-giving food, feel inspired to become a more eco-conscious eater and meal maker, and gain confidence to encourage eco-nutritional awareness and healthy food choices in others with care and compassion.
